Delicata Squash Seeds
This rich, pale cream colored squash has a deliciously sweet, nutty flavor. Try it with a little butter, brown sugar, and a sprinkling of salt & pepper. Elongated fruit are 7 to 10 inches long, with green stripes and flecks. Thinner skin than some other winter squashes reduces the storage potential to about a month, but oh what flavor! One of the tastiest winter squashes out there. High in calcium, potassium, folate, and vitamins A & C.

Name: Delicata Squash – Winter
Botanical Name: Cucurbita pepo
Days to Maturity: 100
When to sow outside: 2 to 4 weeks after average last frost and when soil temperatures have risen above 60°F.
Harvesting: Harvest just before the first fall frost, (do not leave in the garden when temperatures drop below 33°F) when the squash’s rind is hard enough that you can’t dent it with your fingernail. Cut, (don’t break the stems off) leaving 2″ of stem attached. If stem attachment is broken, the squash will rot in a few weeks. Though fruits are hard and may seem indestructible, treat them gently; a bruised squash spoils quickly.
